A small, Camembert style cheese made by Fromagerie Gros Chene in Belgium using 100% goat's milk. It has a light, bloomy rind and a pale, ivory colored paste. It starts out milky, mushroomy and a bit chewy when young, and develops a creamier texture and more complex flavor as it ages. When fully ripe, it can ooze from its rind and announce its presence with a deep truffle-like aroma.
