Caraway (whole seed)
Caraway seed, which comes from an herb in the parsley family, is commonly found in German, Austrian and Hungarian cuisine. It's used in a variety of ways, including as an addition to breads (rye), cheeses (havarti), alcohol (akvavit), and is also a common addition to sauerkraut. It also has a long history of medicinal use for the treatment of colic, loss of appetite and digestive disorders. It has a nutty, dense anise flavor made more potent by grinding, so use it sparingly.
