This puree d'Espelette is a simple preparation of the regional pepper called piment d'Espelette where the dried pepper flakes are blended to a fine paste with vinegar, water and salt.
The heat in this puree is not intended to overwhelm, but it does develop into a formidable strength as you taste it. We enjoy it as a side to grilled or roasted meats.
