Peppercorns, Green
Black, white and green pepper all come from the same Piper nigrum plant, a vine that grows primarily in hot, humid, tropical environments such as India (primarily), Indonesia, and Brazil. Black peppercorns are simply the dried unripe berries. The processing of green peppercorns is to immerse the fresh green fruits in boiling water for about 20 minutes, this kills the enzyme in the berry's skin which normally will turn black when dried.
These dried green peppercorns retain their strong, aromatic quality and beautiful green color, but they are less intense than either white or black pepper. Use in delicately flavored dishes when you want a pepper flavor with less pungency.
