Bay Leaf - Mediterranean (dried)
An essential part of the classic bouquet garni, when combined with parsley and thyme. Use bay leaves to flavor stocks, stews and meat dishes. Bay leaf is the aromatic leaf of several species of the Laurel family (Lauraceae). Mediterranean bay leaf is most commonly found dried in stores. If you find this type of bay leaf fresh, keep in mind that the fresh leaf will be twice as strong as the dried leaf and has a more bitter flavor.
