These "golden" peppercorns are the ripened and partially hulled berries of the Piper nigrum vine, a tropical perennial climber that can reach over 30 feet in height. The ripe peppercorns are washed in a jute bag to partially remove the darker husk or pericarp of the peppercorn to reveal a golden colored peppercorn. The process is similar to that used to produce white peppercorns, but in this case, they remove less of the pericarp so that the pepper maintains a slightly darker color.
Malaysian Sarawak peppercorns are highly prized in the world of specialty spices for their high content of piperine. Using just a small amount of these peppercorns will give a beautifully aromatic heat to any dish.
This Kuching variety of pepper is hand-harvested from the Sarikei garden by one man (Mr. Siew) and the peppercorns are processed within 24 hours of harvest (an unheard-of feat in pepper production). The fresh berries are soaked in water to slightly loosen the outer shell (the pericarp). Most of the pericarp is removed by rubbing the peppercorns in a cloth sac by hand until the pepper has a pale golden color. The resulting peppercorns are then washed several times with clean, cold water. Then the peppercorns and then are dried in a rustic oven at 175F - 200F for several hours.
The pepper is aged for between four and ten years before release to ensure a fully cured and spectacularly flavorful pepper.
