Michael Lee makes a variety of cheeses on a small scale using milk from his own herd of goats as well as cow's milk of nearby dairies.

His Crawford cheese is made exclusively with the milk from Butterwick Farm of Cornwall, VT owned by John and Lisa Roberts. The herd of 150 or so of Brown Swiss and Holstein cows, are on a primarily grass diet and produce a milk that is rich, sweet, clean, and consistent.

This cheese comes in a small squarish form with a firm crust and a dense, yet pliable interior. It has a nice milky flavor with a touch of tanginess along with grassy and earthy tones.


This cheese is available year-round, but our stock changes quickly due to the small quantity of production.
