French olive oil is produced in four regions: Provence, Languedoc-Roussillon, Rhone-Alps and Corsica. In these dry and hot regions, the groves take in the bright sun and develop their fruity complexity. The predominant olives used in making these oils include Aglandau, Cayanne, Salonenque, Beruguette, Grossane, Sabine, Picholine, Cailletier (nicoise) and Tanche olives.
