Jam and Mostarda

Fruit ripened on the tree and picked at its peak by artisans who seek to preserve the pure flavors with as little intervention as possible. Typically these preserves use minimal sugar (if any), they simmer the fruit down over an open fire in copper pots and they use the naturally occurring pectin of the fruit rather than adding pectin. Each maker has their own style; from the fruits they select and the combinations they use to the amount of sugar. These are such simple foods, but done well, they are transporting when served with a warm scone or as an accompaniment with your favorite cheeses.
