Duck Breast Pastrami - House-made

Made in our kitchen using Bella Bella Moulard duck breast. Each breast is cured for five days with salt, brown sugar, bay leaf, thyme, and chili flake. The meat is then coated with cracked peppercorns and coriander, hot smoked (over apple wood) for 15 minutes, and then hung for two weeks. The thin slices have a beautiful deep color and a generous portion of fat that melts in your mouth.
