Swirled Jam Bread

This recipe comes straight from our head baker and is fantastic because you can change up the jam flavor, depending on your whim!  We are quite partial to Bonnie's Strawberry or Black & Blue jam.

½ lb. butter, softened
2 cups sugar
4 eggs
1 teaspoon vanilla
3 cups flour
1 cup milk
1 ½ teaspoon baking powder
¼ teaspoon salt
1 cup jam

Butter one 8 x 4 loaf pan.

In an electric mixer, cream together the butter and sugar until light and lemony in color (about 3 minutes).  Scrape down the bowl.  Add the eggs and vanilla. Mix until fully incorporated.  Scrape down the bowl again.

In a separate bowl, mix the flour with baking powder and salt.  Add the flour mixture alternately with the milk (3 additions of the flour and 2 additions of the milk).  Mix only until the flour is fully incorporated (overmixing will produce a tough bread).  Swirl your chosen jam into the batter and pour into the prepared pan.

Bake at 350°F for approximately 40 minutes, or until a cake tester comes out clean.
