Tomatoes Stuffed with Tuna Salad

Serves 6

6 tomatoes (not too ripe)
8oz Flott Solid White Tuna packed in olive oil
1/4 cup fresh parsley leaves
1/4 cup fresh breadcrumbs
1 small onion
1 garlic clove
Ranieri Unfliterd Extra Virgin Olive Oil
Sea Salt and freshly ground Pepper

Wash & dry the tomatoes, cut each tomato horizontally and scoop out the insides with a spoon. Finely chop the parsley, onion, garlic and parsley. Strain some of the oil from the tuna and in a medium bowl, mix the tuna with the herbs, garlic and onion. Add the breadcrumbs, salt, pepper and mayonaise to taste. Stuff the tomatoes with the tuna mixture, and before serving, drizzle olive oil generously over all.
